Vegan Pepperoni Pizza Puffs
I stumbled upon this and made it vegan.... Super good : )
1 1/2 cup flour
1 tsp. baking powder
1 tsp. dried oregano
1 1/2cup soy milk
1/4 cup of olive oil
1 tablespoon of apple cider vinager
1 egg replacer
5 cloves of garlic
1 1/2 cup of shreaded vegan cheese ( I used Chreese and tofutti blend )
1 1/2 cup of vegan pepperoni diced (I cut up a few smart dogs and panfried them)
1/2 cup pizza sauce (homemade or store-bought) I added a tablespoon of veganaise to make it creamy
2 Tbsp. fresh basil, finely diced.
Preheat oven to 375o. Grease a 12-cup muffin pan. In a large bowl, whisk together the flour, baking powder and oregano; In a separate bowl mix soy milk and egg replacer , and apple cider vinegar and olive oil the lightly wisk. Stir in the mozzarella and pepperoni; let stand for 5-10 minutes.
Stir the batter and divide among the muffin cups. Bake until puffed and golden, 25-30 minutes.
Warm the pizza sauce, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs with the pizza sauce for dipping.
