Coconut Pumpkin Pudding w/ Cashews with Raspberry Sauce




Pumpkin Pudding

1/3 cup of sugar
1 cup of pumpkin puree
1 cup of coconut milk
1/4 cup cashews
pinch of salt
3 tbsp of corn starch
1 tsp of vanilla extract
1/2 tsp of cinnamon
1/2 tsp of nutmeg

In a pan whisk together 1/4 cup of coconut milk with cornstarch, salt, and sugar until a paste in a pan over med heat. Add in coconut milk, spices, cashews, and puree whisk together and bring to a boil. Continue to wish for a few mins tell pudding thickens. Pour in individual glasses, chill for 2 hours, and serve!


Raspberry Sauce

1 cup of raspberry
1/4 cup of brown sugar
1/4 cup of cane sugar
1/2 cup of apple juice
1 tbsp of cornstarch

Whisk on medium high bring to a boil Whisk tell thickens layer on pumpkin pudding!
